“Puff pastry boats” with basil and truffle pesto mousse

RECIPE FOR 2 PEOPLE: 
1 spoon of PURO Truffle Pesto
1 roll of puff pastry
100 g of spreadable cheese
2 slices of mortadella
Salt to taste
Black pepper
Parmigiano Reggiano cheese to taste for the decorative wafer

HOW TO PREPARE IT:

Use the puff pastry to create a boat shape and bake in the oven.
In a cutter mix the mortadella with the truffle pesto, in a bowl add the spreadable cheese to the mixture.
For the Parmigiano Reggiano wafer:
Pour some Parmigiano Reggiano cheese into a non-stick pan and let it melt until it forms a golden wafer.
Dish composition:
Stuff the “puff pastry boats” with mortadella and truffle mousse, decorate with cherry tomatoes and Parmigiano Reggiano cheese wafer.
